Quick and Delicious Creamy Tomato and Salmon Skillet

Ingredients:
- 1 1/4 lbs skinned salmon fillet divided into 4 portions
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 2 tbsp olive oil
- 1/2 cup chopped onion
- 1 medium zucchini, cut in half lengthwise and sliced thinly
- 1/3 cup dry white wine or low-sodium vegetable broth
- 1 tsp Italian seasoning
- 2 oz cream cheese, divided into cubes
- 1/2 tsp garlic powder
- 1 15-oz can diced tomatoes
- 1/4 cup chopped fresh basil
Directions:
- Sprinkle salmon with 1/8 tsp salt and 1/8 tsp pepper
- Heat 1 tbsp olive oil in large skillet on medium-high heat
- Add salmon and cook for 3 to 4 minutes until underside is browned
- Flip salmon and cook another 2 to 3 minutes
- Move salmon to plate
- Add 1 tbsp olive oil, zucchini slices, and onion to pan
- Cook for 3 minutes on medium-high heat and stir
- Add wine or broth to pan, stir, and cook for 2 minutes until it evaporates
- Add Italian seasoning, cream cheese cubes, garlic powder, diced tomatoes, 1/8 tsp salt, and 1/2 tsp pepper
- Simmer and cook for about 5 minutes, stirring occasionally
- Place salmon back in pan and flip to coat with creamy tomato sauce
- Sprinkle basil on salmon and serve
