Cold Cucumber Soup
In this healthier cold cucumber soup recipe, yogurt replaces the heavy cream that older versions of this recipe called for.

Cold Cucumber Soup
Yield: 4 cups
Prep time: 15 minutes
Ingredients:
- 2 cucumbers, cleaned and seeded, but not peeled
- The juice of one medium lemon
- 1 cup chicken stock
- 1 cup yogurt
- 4 Tablespoons minced scallion greens, for garnish
Instructions:
- Rough chop the cucumbers.
- In a blender, place the cucumbers and all the other ingredients except the scallions. Blend until smooth.
- Pour into a bowl and refrigerate for two hours, or until chilled.
- Serve chilled in individual bowls, garnished with 1 tablespoon of scallion greens for each serving.
