Watermelon Chicken with Balsamic Glaze

Chicken Ingredients
- 2 lbs skinless chicken breasts
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/2 tsp red pepper flakes
Balsamic Glaze Ingredients
- 2 cups diced seedless watermelon
- 2 tbsp lime juice
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tbsp cornstarch
- 1/2 tsp salt
Cooking Directions
- Combine chicken, lime juice, olive oil, salt, cumin, and red pepper in a bowl
- Coat chicken, then marinate for an hour
- Preheat grill to medium-high heat
- Combine lime juice, watermelon, balsamic vinegar, honey, cornstarch, and salt in a blender
- Blend glaze ingredients until smooth
- Pour glaze into saucepan and boil on high heat
- Reduce heat to medium, then simmer for 5 to 7 minutes
- Place chicken on the grill
- Cover and grill chicken for 5 to 7 minutes
- Flip chicken, brush with glaze, cover, and grill for 2 to 3 minutes
- Brush with glaze again, and grill chicken for another 2 to 3 minutes until fully cooked
- Remove chicken from the grill, and wait about 5 minutes before serving
- Brush with more glaze if desired, or serve the rest of the glaze separately for dipping
