Sweet Potato Black Bean Skillet

Sweet Potato Black Bean Skillet

The following recipe is a great, brain-healthy way to jump start your day. Sweet potatoes contain beta-carotene – good for cognition! Egg yolks contain choline, which contribute to healthy brain function. Black beans, another brain-boosting food, contain vitamin B. Overall, your brain and taste buds will love this breakfast!

Ingredients:

  • 1 small onion
  • 1 tbsp. olive oil
  • 1 15 oz. can drained black beans
  • 2 medium sweet potatoes, peeled and chopped
  • 1 14.5 oz. can chicken broth
  • Pinch of pepper
  • 1 egg, cooked over easy
  • Avocado (optional)

Directions:

In a skillet, sauté the onion in olive oil until translucent. Mix in the beans, broth, sweet potatoes, pepper.

Bring the mixture to a boil. Lower the heat and let simmer, covered for 25 minutes. Uncover and let simmer for another 10 minutes, or until potatoes are tender.

Meanwhile, cook your egg over easy and add in once potato mixture is finished cooking. Top with sliced avocado.
