Lentil Pork Bowl
Below is a healthy dinner, with a bit of a kick! If you are interested in brain health, lentils should be a staple in your diet. Lentils are a source of folate, which has been shown to help with brain health. The egg on top contains choline, which can help your mood and memory. This is a filling, healthy, and tasty dinner that you should feel good about eating!
Ingredients:
- 1 cup lentils
- 2 cups chicken broth
- 1 cup water
- 4 pork chops
- 4 eggs
- 1 tsp garlic powder
- 1 tsp ground ginger
- Salt and pepper to taste
- Sriracha sauce (optional)
Directions:
Preheat oven to 400 degrees.
Season pork chops with ginger, garlic, salt, and pepper. Place in oven for 15-20 minutes, or until pork reaches an internal temperature of 145 degrees.
While pork chops are cooking, prepare your lentils. Bring your chicken broth and water to a boil over medium heat. Once boiling, add in your lentils. Cover the pot, reduce heat, and simmer for 20 minutes, or until lentils are tender.
Cook 4 eggs, over-easy style.
Place a couple scoops of lentils in a bowl. Next, place your pork chop on top, and put your egg on top. Drizzle with sriracha, if desired. Refrigerate, or share with others!
