Turkey Zoodles
This dinner can be made in about 20 minutes! Quick, easy, healthy – is there anything better? The below recipe is full of brain healthy ingredients! Zucchini contains folate, potassium, and antioxidants that are known to help brain health. The garlic in this recipe is also beneficial for the brain by being good for memory and overall cognitive function.
Ingredients:
- Frozen 12 oz bag of zucchini noodles
- 1 lb lean ground turkey
- 2 tablespoons minced garlic
- 1 ¼ teaspoon Italian seasoning
- Salt and pepper to taste
- 3 cups marinara sauce (pay attention to sugar content)
- 2 teaspoons olive oil
Directions:
Preheat oven to 400 degrees.
In a skillet, heat 1 teaspoon of olive oil over medium heat. Add your frozen zucchini zoodles and cook according to package instructions. Set aside after cooking.
Meanwhile, heat 1 teaspoon of olive oil on a skillet over medium heat. Add the ground turkey and cook until brown. Next, add the garlic, Italian seasoning, salt, and pepper. Cook an additional 5 minutes.
Add in the marinara sauce. Cook until it is warm, about 5 minutes. Add in the zoodles and reheat.
Enjoy as is, or grate some Parmesan cheese over the top. Enjoy!
