Ingredients:
- 2 tablespoons creamy peanut butter
- ½ cup soy sauce
- 2 tablespoons curry powder
- 2 teaspoons minced garlic
- 6 skinless, boneless chicken breast halves, cut into bite-sized pieces
Instructions:
- Boil the chicken in a small amount of water on the stovetop until cooked through. Drain and set aside.
- In a saucepan, combine the peanut butter, soy sauce, curry powder, garlic and curry powder. Heat on low, whisking until smooth and creamy.
- Stir the chicken into the sauce and heat on low, stirring occasionally.
- Remove from heat and serve.
