Chicken Satay With Peanut Sauce

A simple dish that helps support healthy brain function using lean protein and creamy peanut butter that your whole family will enjoy. 

This recipe has a whole host of ingredients that support healthy brain function. The first is chicken. Chicken is a healthy, lean protein that contains certain compounds that can support healthy brain function. These include choline, B6 and B12. Choline is a building block for acetylcholine, and a naturally occurring brain chemical related to healthy brain function. Garlic can support healthy brain function, as well.

Many people are allergic to peanuts, so this isn’t a recipe to try if this applies in your household. However, the benefits of peanuts come largely from the fact that this legume has high concentrates of niacin.

Curcumin, present in curry powder in the form of turmeric, may support the production of a brain hormone called BDNF.

Not only does this recipe support healthy brain function, it is also a very easy recipe to make at home. It takes only about half an hour to prepare, and doesn’t require any hard-to-find ingredients. Note: This recipe pairs well with green beans, which also taste great with the same sauce.

Chicken Satay With Peanut Sauce

Servings: 4

Prep time: 10 minutes

Cook time: 10 minutes

Total time: 20 minutes

 

Ingredients:

  • 2 tablespoons creamy peanut butter
  • ½ cup soy sauce
  • 2 tablespoons curry powder
  • 2 teaspoons minced garlic
  • 6 skinless, boneless chicken breast halves, cut into bite-sized pieces

Instructions:

  1. Boil the chicken in a small amount of water on the stovetop until cooked through. Drain and set aside.
  2. In a saucepan, combine the peanut butter, soy sauce, curry powder, garlic and curry powder. Heat on low, whisking until smooth and creamy.
  3. Stir the chicken into the sauce and heat on low, stirring occasionally.
  4. Remove from heat and serve.
