Breakfast Egg Muffins
This is a quick and healthy breakfast that you can make ahead of time and grab as you are on the go! The spinach in these egg muffins are rich in vitamin K, lutein, folate, and beta carotene, giving you a brain-healthy boost in the morning. Eggs contain B vitamins, folate, and choline. Not only are these good for brain health, but they will keep you powered through the morning!
- 12 eggs
- ¼ cup spinach, chopped
- ¼ cup diced tomatoes
- ¼ cup feta cheese
- salt and pepper to taste
- cooking spray
Preheat oven to 350 degrees.
Spray a 12-cup muffin tip with cooking spray.
In a bowl, whisk the 12 eggs. Season with salt and pepper.
Pour the egg into the muffin cups, about half full.
Sprinkle in the spinach, tomatoes, and feta cheese throughout the 12 muffin cups.
Bake for 20 minutes. Enjoy!
