The below recipe is a delicious and brain healthy lunch to get you through the day. Avocados contain monounsaturated fats, which support the memory and learning centers of the brain. Shrimp is loaded with B12 and Omega-3 fatty acids, both of which have been found to support brain health. You can’t go wrong with this lunch!
Ingredients:
- 1 c. quinoa
- 2 c. vegetable broth
- ½ avocado, chopped
- ¼ pound shrimp
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- ½ tsp olive oil
- ½ c. diced red onion
- 1 tomato, cut into chunks
Directions:
In a bowl, mix together the shrimp, chili powder, cumin, salt, and pepper. In a skillet, add the olive oil and shrimp. Cook the shrimp until it is cooked through and pink.
While the shrimp is cooking, bring the broth to a boil. Stir in the quinoa and reduce the heat. Cover and simmer until the broth is absorbed, roughly 15 minutes.
Combine all ingredients in a bowl and enjoy!
